CRUST: 7.9 — this is a solid crust, and the best part of the slice. Terrific mouthfeel, crunchy yet chewy, little flop, good char on bottom. Classic taste, though nothing extraordinary. A bit flaky at times, and prone to have shards break off when going for the NY fold. SAUCE: 6.4 — couldn’t really taste the sauce, seemed like a good amount but a bit bland. A little garlic and basil could upgrade the sauce imo. CHEESE: 6.7 — cheese looked great & sauce/cheese ratio was good, but also a bit bland. Also a rather greasy slice. Small changes, perhaps by adding just a bit of Parmesan or Pecorino Romano, could potentially take this slice into the 8’s. Great foundation, great texture, just needs a little something flavor-wise.
