-/- NOW CALLED FULL MOON PIZZA -/- Served NYC back of the bus hot in 3-4 minutes with a hard Bronxville crisp and a heavy Palmer Ave flop. First Bite Score: 6.7 The sauce is very please in with above average salinity and seasoning. The sauce is of medium viscosity and a perfect tang. The mozzarella is decent but oily when presented and it is slightly soupy due to the massive amount of sauce on the slice. The dough is pedestrian and not overworked. There is Zero undercarriage char despite having a good first crunch. The ratio is off balance with the sauce being the dominant element. SAUCE: 💯% the best sauce I’ve had in years. It’s a little thicker than I like but the consistency is magical. It really does it’s job as a supporting cast member for the other elements. MOZZARELLA: average, solid, decent for what it is. If a better product is used here this slice could sniff at a low 8 score. There is a mild salinity with a below par chew. DOUGH: super thin and flavorful but slightly overworked when forming the crust. RATIO: the center of the slice had way more sauce than anywhere on the slice, which threw the taste off a little SUB SCORE: 7.6 Summary: this is an oversized slice and I am always skeptical of them. Oddly, this slice didn’t disappoint like most of them do. The sauce is to die for and the mozzarella isn’t horrible. The $4.00 price tag is justifiable because you do get a very good slice and it’s ginormous to boot. The dough recipe needs to be retooled and maybe examine their reheating process. Other than that I have to deduct for the imbalance in ratio and the excessive amount of sauce. But compared to the other pizza in the area, this is the only place to nosh pizza for me. Final Score…
