Pizza Review
This is now 4Bros according to the address. This was a disappointment. Their pizza looks very good on social media. And while I did think their crust was good bordering on great, the flavor just wasn’t there. I think their sauce is the issue for me. It’s tart plus it had no basil unlike the pictures I’d see on social media. I’m never in the mood to rip a place down. It just didn’t meet my high expectations. But to say this pizza is bad or even average just because it wasn’t my cup of tea would be foolish. The char and leoparding on the crust and how well baked it was was exceptional. Nice chew to it. The sauce to cheese ratio was excellent. It’s a a loose but not watery sauce heavy on tomato flavor, Valdorosa brand. Cheese is your low moisture mozzarella type fare. But I generally feel the best pizza sauces should go into two categories: a raw, naturally “sweet” San Marzano sauce unadulterated by any seasoning besides salt and basil, or a heavily seasoned, even simmered sauce with garlic, oregano or basil, salt, pepper, olive oil, etc. It doesn’t fit in either category, so it didn’t do it for me. I judge most pizza based on flavor above everything. But this slice is well constructed, no flop, not greasy at all, and I can’t knock that.
