Pizza Review
This is one of two baby slices I've had at the One Bite Fest. Harder but not impossible to judge a place on them. Almost every one I got was hot and fresh. First baby slice (pictured) lacked sauce and mostly tasted like basil. They shave parmigiana off the block on their pizza on top of using the normal (usually Grande brand) dry mozz. But the second slice I had later was more balanced with sauce and less dry. Biggest surprise—and this may be due to circumstances—but the crust wasn't as airy as I thought I would be. It was very good though light, thin, well done, light chew, but not with a raised cornicione you can see the air pockets and tasted the fermentation in. Sauce that is there is well balanced between acidity and a hint of natural sweetness. This is more of a cheesy pie. Anyway, hard to remember the nuances of the 30+ places I had, but this is still on my list to try at the actually pizzeria if I'm in Philly. But for now, based on what I had, it doesn't get the 9 from me. Still very good.
