Inferno is spicy as hell but very good. A little doughy but a lot of flavor

I decided to try 2 different kinds of Neapolitan style pies, a Margherita (which is their basic cheese) and an Inferno pie (which seems to be their signature pizza). I’ll start with the Margherita pie, pictured on top. Like most of the wood-fired oven pizzas I’ve had, the dough is incredibly soft & chewy with zero crisp, including a charred but disappointingly soft crust. I thought about taking a test to see if I had Covid because this pie was virtually tasteless. The sauce is severely lacking in flavor, no tang or zest whatsoever. The cheese is decent, somewhat creamy but not packing much flavor either. For a fairly thin personal size pizza, it’s surprisingly doughy. The Margherita pie comes in at a rather disappointing 6.8, with lots of room for improvement. The Inferno pie is a completely different story. Bursting with lots of flavor & plenty of heat 🔥 🥵 thanks to the spicy soppressata & Italian pepper combined with a zesty tomato sauce, lava-like mozzarella and ‘Nduja (a very spicy spreadable pork from Italy). Each bite is a combo of pleasure mixed with pain from the incredibly hot & spicy ingredients. Be careful with any oil that drips off the cheese, it’s packed with heat! I would love if this pie were crispy, you’d be looking at a score in the 9s. But as is, this is a really terrific pizza deserving of an 8.8, which averages the overall score to a solid 7.8 between the 2. Definitely try the Inferno pie if you can handle heat, and if not, I’d go with a specialty pie over their basic cheese Margherita, which leaves a lot to be desired.

Amazing crunch. Delivered fresh. Excellent sauce / cheese combo. Toppings were superb. Highly recommend. Crust was delectable.

The Inferno Pizza is excellent. Right tempature, taste and crust is light and crispy

Great Fluff on Dough, perfect sauce to cheese ratio. Slight char not burnt. One of the better wood fired 12" pizza's you will find. Cheese was a tiny bit on the saltier side.

Great pie. Paper thin crust. Nailed the sauce/cheese ratio. Dough was light. Decent char. Only downside was it was cold by arrival, but can’t blame the pie for its delivery guy

Petty close to what I just had in Italy. Fresh muzzarell, soft and light crust, and good pizza sauce.

New favorite pizza in Hoboken! The sauce and drizzle of olive oil is is very tasty. Also pro tip if you sprinkle that pink Himalayan sea salt on top the pizza is immediately a 9.9

Tough break for Apulia on this score because the pizza was a little cold by the time I ate it. Either way, still think it’s below average by Hoboken pizza standards.

Great sauce and crust has a nice crunch. More of a date pizza place and prices reflect that, but a really good slice.
