Established in 2016 and serving brick oven pizza as well as traditional Italian dishes ever since. Unlike typical thick and doughy football pizza, this pie is thinnish and light, like a shaved down version of a standard football pie. Surprisingly firm with zero flop and a quality texture on the undercarriage, the dough is actually shockingly soft despite the thinness & firmness. The crust is similarly soft, lacking any definitive crunch. Not much char for a brick oven pizza; but the dough is rather tasty despite the overall lack of crispness. The cheese has a better than average oozy, melty flow, decent flavor and nice texture on the fairly basic blend of shredded mozzarella; nothing special but not bad at all. Aside from some slight drippage, the grease is very manageable, not too salty or intrusive upon the other ingredients. With true pizza flavor, the sauce is a very solid mixture of tomatoes and spices. Slightly sweet with a touch of tang and a bit of zip & zest, the sauce is mildly exciting, holding the pie together with well balanced sauce-to-cheese-to-dough ratios. Overall, this is quality pizza, held back mostly by the lack of crisp in the dough & crust. More time in the oven could bolster the final score significantly. Also, a better quality cheese could reduce excess oil and elevate the overall rating to the low 8s. All in all, you can’t go wrong with this very solid strip mall restaurant brick oven pizza.
