People like to find reasons to complain. I'm not one of them. I've had Aurelio's at around 10 different locations and they were all phenomenal pizzas. Saw a few reviews saying certain locations taste better than others and whatnot, but if you're honest with yourself and know anything about pizza ovens, ingredient distribution areas, etc. you know there could be SLIGHT differences. One thing is for sure, if you put an Aurelio's pizza in front of me from any of their locations and blind taste test me, I will know exactly what I am eating. Aurelio's has their own unique taste that has established them as one of the top local chains in the Chicagoland area for over 60 years. Schererville just happens to be my hometown location, which I've eaten innumerable times. What you get here is a thin soft airy crust cooked to a golden brown. It really has a non-comparable texture to it that is right in the middle of crispy and flimsy. The craftsmanship has the cheese and toppings stretched across the entire pizza all the way to the very end up the crust. This is a pizza for people who do not like to eat crust, because there really isn't any. The cheese blend is not a straight mozzarella. The cheese is melted with just the littlest hint of caramelization on top resulting in a clean bite that doesn't have a stingy quality as you pull it away. If I knew what the cheese blend was, I still probably wouldn't tell you, because I respect what Aurelio's does. The sauce is delicious; just leans slightly to the sweeter side, so it could still appeal to almost anyone who loves pizza. They have one of the best seasoned sausage that is cooked perfect and juicy. Pepperoni is cooked enough until is not crispy, but not greasy and soggy. It has a nice spice and saltiness to it. Sometimes I find myself eating other pizzas and I think "Hey this almost tastes like Aurelio's." If that is any testament to the staple this great restaurant has in the pizza eating community, I don't know what does. If you live near an Aurelio's, it is your duty to at least check them out.
