This pizza died a death before it even got delivered. Me and a friend genuinely wondered if they gave me yesterday’s pie. It’s dry as a sandstorm.
Now some people like that. The crust reminds me of toast, it’s a crumbly crust. If I'd have to guess, it’s a low hydration, quick rising dough from the looks of it. I assume it’s fresh but it tastes like it isn’t, and that’s straight out of the delivery box. I live 2 miles away.
There’s little sauce here too. It’s a pasty, naturally sweet sauce. Not herbaceous or salty. Way over into the cheese in the sauce to cheese ratio with an average quality low moisture mozzarella. Sauce dries out to the cornicione.
Noticed a little grease which is usually a plus. But it honestly needs *some* kind of liquid from something, that doesn’t help it for me.
I’m losing the narrative though, back to what makes this pie distinct: the crust. Like imagine a pizza with a crust the texture of toast? That’s what this is. Well done and dark brown crust without asking. I could feel the grittiness of the flour on the crust and see it on a slice.
There’s this obsession on this app about “no flop” and it’s not mistaken. I like a good, crispy crust. But I care about taste above anything else. To me, this needs more and a wetter sauce and a higher hydration dough *at the least* before you even get to anything else. I'd even prefer it undercooked, like in some of these other photos.
But I think people who like a dry toasty, well done, medium thin, cheese dominant “no flop" pie will like this. I didn't care for it.
So far it's the worse I've had around my immediate area after almost 50 reviews on here. I'm honestly not trying to be negative, that's just the truth. I regret some old scores as too low. This is not.
