A family business since 1975, now run by actual Berardi brothers Mike & Nick. They are big believers in quality ingredients and it doesn’t get more quality than Grande mozzarella. Aside from fresh buffala mozz, Grande’s blend is top notch among shredded pizza cheese mozzarella. While incredibly delicious, the only issue here is they use just a little too much cheese. This is thick, football style pizza at the beach with very soft Jersey Shore boardwalk dough and zero crisp. The thickness of the dough & cheese buries the taste of the scantly spread sauce. In fact, the sauce is borderline MIA; I’m searching for substance, hardly any flavor can be deciphered. With the exception of some slightly shaved tomato skins for color, this is essentially a white pie from the lack of sauce. It’s a shame cause the dough & cheese are very tasty, with terrific spices spread atop the pie. The crust is soft, doughy and thick as well with minimal crunch or crisp. There’s a lot to work with here; a few adjustments could boost this overall score into the 8s. A lighter spreading of the cheese, a little more time in the oven to crisp and definitely pump up the volume of the sauce. This is still very good pizza, especially by Jersey Shore standards. But as it stands, it’s a bit too doughy, far too cheesy and not nearly enough sauce to go around. The quality of the cheese saves this rating from dipping below a 7.
