Served 4th quarter Reggie Miller (vs the Knicks) hot in 5-7 minutes with no Clark flop and a decent Raritan Rd crisp. First Bite Score: 6.1 The sauce has a great big tang and is very sweet with little to no flavoring or salt. The mozzarella is decent at best and they put about half a brick on your tiny little pie. The mozzarella is soupy toward the middle and has a decent chew with medium salinity. The dough recipe is okay with a good charred undercarriage and good chew. The dough, is not fully cooked in the middle but is nice and this so it’s not too bad. Sub Score: 6.3 SAUCE: if it weren’t so thick, tangy and underwhelming this could raise the score by at least .06 points. For a bonus .04 it would have to be thinner as well MOZZARELLA: I don’t see King James revamping this aspect, it feels like they went with the “spray & pray” method. Just spray enough cheese on the slice and pray the customers forget about the overall medio of the pie. DOUGH: not bad but they need to find a way to get the center cooked. Points for thinness and crunch the flavor profile could use more salt. Summary: let’s face it, this is chain pizza and there’s not much more to be said. Inside of that, it is pretty decent and not the worst. But when working with fresh ingredients, you should be able to knock your customers socks off. Sadly that didn’t happpen this trip but it was still overall a very decent basic pie. Final Score…
