Traditional Neapolitan woodfired pizza true to its origins. The crust is slightly charred, puffed and crisp with a soft chewy center,(some describe it as having a “wet” center) the tip of the slice will not be”erect”when you hold it up, it’ll flop. If it does stay erect , it is over baked. This pizza is made just right. Its approx. 12” in diam cut into 4 slices so that you fold it and eat it the way it is eaten in Italy and on the East Coast. If you like crispy pizza cut into squares this is not for you. It is a one of a kind in Lincolnshire and probably safe to say top-five pizza places in Lake County. A must try, but don’t compare it to conveyor belt electric\gas oven pizzas it’s totally different. Hope you enjoy it.
