Ordered a cheese pie, the gold medal slice. Comes as a square pie with a medium thickness Boudin sourdough crust. Enjoyed the good sourdough flavor. Undercarriage is crispy around the edge but has a bit too much flop as you get towards the center.
The pie is topped with 4 cheeses: fresh mozz, shredded mozz, parmesan & cheddar, which in my view is too many. The sourdough crust already adds a lot of flavor, so the 4 cheeses overcomplicate the pie. I’d suggest they drop the cheddar and maybe the parmesan.
The sauce is decent but nothing to write home about. It seems a bit over-seasoned given what’s going on with the crust and cheese.
Would recommend baking longer for a crispier, more consistent undercarriage and backing off on the cheese to highlight the crust’s unique sourdough flavor.
