Served hot in 4-5 minutes with a mild Penn Yan crisp and a heavy Main Street flop. First Bite Score: 3.4 The sauce tastes like it was heated up in the can it came in, very heavy with overwhelming tastes of sugar and tin. The mozzarella is only on half the slice and is medium to low quality with indiscernible salinity of flavor. The dough recipe is very bland and tastes almost raw. Sub Score: 3.6 SAUCE: please start over and throw away the current recipe. Nothing worth saving here. Needs to be lighter, thinner and fresher. Mozzarella: improve quality and cover more than half the pie. Dough: if I didn’t know that it was cooked I’d think it was raw dough with no flavor, seasoning, texture, crisp and undercarriage. Please start over. With a lighter sauce, better cheese and a new dough recipe this might be in the high 6.0’s. Final Score...
