Great coal fire pizza

Served lava hot in 3-4 minutes with a mean Orangeburg crisp and a heavy Rt. 303 flop. First Bite Score: 7.4 The sauce is very sweet and scarce. It is served on top of the pizza, so what you see is what you get. The mozzarella is super fresh and very high quality with great balance and chew. The dough recipe is off the rails. Superb texture, salinity and cooked to perfection. The crust and undercarriage are phenomenal. They are light, airy and yet maintain a very good crunch. Sub Score: 8.1 SAUCE: very sweet with no salt and a small tang. The saltiness of the dough makes up for it. MOZZARELLA: spot on in every way. Super fresh!!! If there was a little less cheese it would let the other elements shine. Too much for me! DOUGH: one of the best yet, delightful in every way. The only knock is that it was chewy toward the center. It could have used another minute under the heat. With more sauce, less mozzarella and a harder cook this is a low 9.0 slice. Final score...

Amazing thin crust coal fire. Got the “classic”. Fresh tasty ingredients and cooked perfectly. Fresh mozzarella spread across whole pie, sauce really stands out. High quality pizza.

Absolutely one of the best pizza spots in Rockland county. Similar to patsys pizza but better. Fresh cheese and excellent sauce.
