So far, Colony is my favorite bar pie I’ve tried. This is my 3rd time having it.
And it’s not my favorite style. To me, the crust is like a thin frozen crackery pizza crust. This slice was cold though. It was a hot oil slice from the One Bite Fest. Colony doesn’t travel well, and that makes sense. Though this was made on site.
Barely any sauce, sharp but overcooked cheese flavor, nice background heat with the hot oil, that’s not super oily by the way. But I’m rating what I got here, and it’s dry and near leathery.
