💎HIDDEN GEM ALERT💎 Established in 1996, there’s zero hype surrounding this joint, despite closing in on 30 years in the business. Flying completely under the radar, I had zero expectations going in, preparing for a run-of-mill football pizza; but this total underdog pie pulled off a major upset! There’s nothing fancy about it, doesn’t look special; but I assure this pizza downright dazzles. The dough is terrifically thin, with an almost deep-fried, zeppole-like texture. The pie isn’t charred or blackened from wood fire or coal; but it’s browned perfectly with exceptional crisp by the electric oven. The dough is firm, with a solid undercarriage, tremendously tasty, a beautiful base for the other ingredients to go along with a remarkably crunchy crust. The cheese is pretty standard, tight like a bar pie with a tasty blend of shredded mozzarella and spices and virtually no grease. The true superstar of the pie is the stunningly sensational sauce: high volume, fantastic flavor, tickled my taste buds and awoken my senses. From the middle of the pie to the edge of the crust, there’s plenty of sauce in every bite. A scintillatingly sweet and star-studded mix of tomatoes and spices, the sauce has tons of zest, zip, tang, bang, punch and pizzazz. The unique overall flavor sets this pie apart from basic traditional style pizzas and even had the tremendously crispy texture to match the terrific taste. This is a massively underrated sleeper pie that deserves some real attention. When you look at some of the key components: thin, light, crispy & flavorfully delicious, I’m not sure you can ask for much more from this style of pizza. No bells and whistles, nothing fancy at all, just a really well done traditional round pie worth making a trip for, especially if you love spectacular sauce to along with thin, crispy dough.
