Open since 1994, that’s almost 30 years in the pizza biz. While it looks like a fairly standard football pizza, this is actually a super light and airy pie. When I picked up the box, it was so light, I thought they gave me a bar pie. The undercarriage is pretty firm, while the guts are mostly soft; but the crust is incredibly crispy and feather-light as well. The dough is definitely uniquely textured, with a decent char and sensational smokey flavor. They use the perfect amount of Grande mozzarella, which always has outstanding flavor and top quality texture…Creamy, melty, with a marvelous mixture of spices producing terrific taste. The only down side is the quantity of sauce. I feel like this pie was somewhat stiffed on the amount of sauce spread around. From what I could tell, the sauce has really nice flavor, just very, very light on the volume. Another ladle of sauce could do wonders for this pizza. Even though the grease is manageable, the orange tinge from the oil provides more color than the red tomatoes in the sauce. The light weight of this pie is remarkable, so I don’t want to pile on too much; but I’d recommend jacking up the amount of sauce to match the cheese and dough. I feel like it’s better to have too much sauce than not enough on a pizza. Overall, this is a very tasty pie with the crispy texture to match. A few adjustments regarding the quantity of sauce could absolutely push this score into the 8s. Not quite travel-worthy pizza yet but clearly on the cusp.
