I was in Hays,KS on business and saw that They had a wood fired pizza joint called “Gutch’s”. Pizza usually isn’t on my radar when away on business but I couldn’t resist a wood fired pie.
The place is a pretty nice joint.
The pie:
I ordered an extra cheese Canadian bacon with green olives and green peppers (fight me) and asked them to bake it a little extra for some char flavor.
They actually did something unexpected. They brought be the pie before slicing it and asked me if it was charred enough or throw it back in the oven. It looked perfect.
The Crust. Excellent. Crispy, crunchy, no flop(even with extra cheese) It definitely felt like I was eating something yet it was light.
The Sauce: it is a light sauce. It looks like it’s made in house but admittedly could use some flavor (maybe just salt) I’d like to see them get a bit more flavor in it
Toppings: good quality toppings. I was kinda shocked at the green olives. They were huge Queen olives that were hand sliced. Definitely a pleasant surprise
Overall it was a really good pie. One can definitely taste the wood fired oven which in my opinion should be one of two only ways to make a pie (coal fired is the other)
