The mozzarella is low quality with zero salinity. The dough recipe is king here. It is nicely worked and just a tad under seasoned. The undercarriage is wonderfully crisped and is very thin. Sub Score: 6.4 SAUCE: overcooked, too much oregano and under salted. Mozzarella: use higher quality and apply more to the slice. Dough: standard, under salted. Id the sauce is cooked less, better mozzarella is used and more salt in the dough, this could be in the high 7.0’s. Still not a bad slice! Final score...
