🏝️BEST OF MIAMI ALERT🏝️ Opened in February of 2022, this joint is fairly new to the Miami Beach pizza scene, serving what they call “thin & light Brooklyn style pizza.” With no plain cheese pizza on the menu, I opted for their Margherita pizza which seems a bit fancier than the other pies I’ve seen rated here, trading fresh basil for a pesto swirl & added dollops of ricotta. Several unique flavors collide in a true taste explosion. The dough is proofed for 48 hours, hand-tossed & stretched, creating a thinnish, slightly larger than personal size pie. While it has a sourdough texture, the dough does not have a sourdough taste, which I don’t mind at all. With a firm undercarriage & outstanding char, the dough is wonderfully crispy & tasty, surrounded by a light & airy crunchy crust. The exceptional taste & texture of the dough provides a marvelous base for the other components. Extraordinarily creamy & delicious, they use a fresh Bufala mozzarella and plenty of it; spread across the entire surface of the pie, they do not skimp on the cheese whatsoever, along with some grated Parmesan to enhance the taste. Also aiding the flavor from the mozz are several dollops of creamy & delectable ricotta cheese, creating a bit of a burrata vibe in both taste & texture. Virtually void of any grease, the pizza is lubricated with a drizzle of extra virgin olive oil & some “sweat” from the mozzarella moisture. The sauce is equally as impressive with hearty tomato chunks, sweet & zesty, bursting with garlic flavor, assisted by a pesto swirl that draws out even more taste from the other elements of the pie. So many flavors pinging off each attribute of the pizza creates a whirlwind of taste that separates this pie from typical Miami Beach pizza. Uniquely delicious, this is a fairly fancy but fantastic change of pace pie. Despite the light & airy dough, it’s a little bit heavier due to the weighty ingredients; but make no mistake about it, this is terrific pizza and some of the best you’ll find in Miami, particularly near the beach.
