Pizza Review
Allllrighty! Elio’s Pizza on Fire. Ima be honest, but for a place with fire in its name, the pie was pretty lukewarm when it came to me. Regardless, this Neapolitan pizza joint has got to have some of the doughiest bread I have found in a while. I couldn’t even look at the undercarriage cause it kept falling on me! I get that it’s the style, but I had Spacca’s before and the chew just isn’t the same. Dough has less gluten, which makes it a more cake-like experience, and resembles more of an underdone pie than a proper Neo. My biggest complaint has got to be the amount of cheese which has pooled to the center, and when warm, solidifies thick and falls off easily. I can only best describe the cheese like getting the center slice of a bar style cut into squares, thus making the overall pie super floppy. Sauce is thin and uneven with no tang. If you’re into a sweeter sauce, this will be a decent pie for you. Bread closer to the crust was decent with some char, but if the cheese was a bit more uniform, I would have given it a higher score.
