Exchequer has been on my radar for a while now. They seem to be known for their deep dish, which is different than most tradition Chicago style deep dish we all know and love. Anyway, I order both a thin crust (bottom) and deep dish (top). They may look very different, but I’m here to tell you l... they’re almost the same with the exception of a few details. The bottom crust is the exact same thickness on both. Chop off the rim of crust of the deep dish and you got their thin. The deep dish has double the cheese of the thin, and then the thin looked to be cooked slightly longer. With that said, I favored the thin crust. I was a smooth bottom, cooked well, but not really crunchy. I couldn’t figure it out but something was missing for me in the sauce that could’ve really taken this to the next level, although they do have a good amount of sauce. It is not a dry pizza. The deep dish was the same as described above with extra cheese. Cheese lovers, this is your jam. Overall, it was unique and different. I admire that they own the cheese on top deep dish as their thing. I have no complaints. Solid option.
