Flo & Santos is everything you should expect in a traditional Chicago-style thin crust pizza. They have really figured out the perfect balance of amount of ingredients and flavors. Crust is crispy and cooked perfectly that the sauce doesn't cause any sogginess. Sauce is a very smooth blend non-sweet with the right amount that the cheese still holds together with crust, making it very easy to eat with little mess. They don't skimp on the cheese either. I find that many pizza places throw all the cheese in the center and you end up with this dry crusty area on the outside; not here. You can tell they put time into crafting their pizza that every slice is as good as the last. I ordered pepperoni and sausage on mine. Pepperoni and sausage were cooked under the cheese, which I prefer, because it adds an extra element to the sauce as it cooks. You cannot go wrong with Flo and Santos. Their pizza should appeal to all tastes palates that can appreciate a quality non-chain pie.
