Served New York Knickerbocker hot (current 9 game win streak) in 2-3 minutes with a hard Bergen BLVD ruso and a tiny Fort Lee Flop. First Bite Score: 5.4 The sauce is thick, heavy and metallic tasting. The seasoning is generic with very low salinity. The tang is full of oregano. The mozzarella is very low quality with long thin strands that carry zero chew and salinity. The texture ranges from stringy to good to soupy all in one slice. The dough is above average. The flavor is almost perfectly balanced with a excellent char and crisp on the undercarriage. The chew is pleasant although the dough is very thick. The ratio is off throughout the slice. SUB SCORE: 6.0 SAUCE: tastes like red barn canned pizza sauce from pathmark. Very little tang, flavor or balance. The metallic tinge is something I could do without. MOZZARELLA: improve the ratio, quality and then the slice has a chance to touch the high 6’s or a 7.0. DOUGH: step back and take off your apron. Keep moving, there’s nothing to talk about here. One of the best yet, easily top 10 so far. RATIO: way off, the one consistent bit was tucked away in the direct absolute center of the slice and that was it. 😢 Summary: this felt like a dollar slice due the the quality of the ingredients. I am amazed that you can have near perfect dough and have well below par cheese and sauce. The problem I think is that the are very busy and might not get constructive criticism about their pies. The opportunity is there for the taking, the question is, will they seize it? Final Score…
