The mozzarella is very good quality with great salinity and balance. The dough recipe is top shelf. They use cornmeal on the crust which adds to the flavor and crunch. The undercarriage is nicely crisped and charred with magnificent chew and texture. Sub Score: 7.6 SAUCE: needs a better balance of flavors and increased seasoning MOZZARELLA: needs slightly upgraded quality with more chew and salinity. DOUGH: needs less density and a harder crisp. The seasoning is very mild. With a few tweaks this is a low 8.0 slice. As- Is, this is a very good slice that has minor imperfections. Final Score...
