The sauce is very good with a strong oregano overtone and good tang. It’s just a bit on the sweet side. The mozzarella is very good with just the right salinity. The dough recipe is very good. It is light, airy and flavorful. This leaves the undercarriage not very appealing.
Sub Score: 6.9
The only drawbacks in this slice are the oily cheese and the floppy undercarriage. The seasoning needs tweaking but not a lot and then this would be a mid 7.0 slice. Despite the flaws, I couldn’t put it down. If I’m the area I would try again.
