Pizza Review
Served immediately because I walked in as the fresh pie was coming out of the oven. There was a heavy Stony Point flop zero 9W crisp. First Bite Score: 7.2 The sauce is semi chunky but nice and light at the same time with excellent seasoning and great tang. There was a small lingering taste of aluminum which could mean that they are not using the highest quality canned tomatoes for the pizza sauce. The mozzarella is very high quality with great chew and salinity. The dough is very impressive in terms of texture and flavor. Sadly there was no crisp so the undercarriage is impossible to score. Sub Score: 7.4 SAUCE: the recipe and technique are close to perfect, if the quality of tomatoes is raised and a pinch more salt, this could be a high 7.0 slice MOZZARELLA: step away, touch nothing. I’m not sure how you can improve on this! DOUGH: in fairness the pie probably sat for a few minutes after it came out of the oven and they didn’t want to “reheat” the slice so the slice was super floppy and not that pleasing. The taste and texture were very good. Summary: I was very surprised by how good this slice was. With a crisper undercarriage and a tad more salt this could flirt with the 8.0’s. Final Score…
