This mobile unit started making post-pandemic wood-fired pizzas out of their food truck in April of 2021. The pies are personal size, Neapolitan style with plenty of fresh toppings to choose from if you’re looking for something more exciting than plain cheese. The dough is surprisingly thick with a fairly interesting texture, not crispy, but very firm, somewhat soft & chewy with a bit of a sourdough flavor, rather rigid with a borderline rubbery crust. The cheese is also incredibly thick with a whole milk mozzarella taste giving me Pizza Hut vibes, just entirely too much, completely burying the sauce. I thought they served me a white pie; the sauce is practically invisible, just way too scant. The little bit of sauce I could taste was actually pretty flavorful, not particularly sweet, but certainly a savory blend, just not enough on the pie. This is not a bad attempt at pizza, for a food truck; but I wouldn’t come here specifically for this pie. Their other munchies are outstanding, including terrific burgers, fries & wings. Also, their specialty pizzas look fantastic and might be worth trying; but unfortunately, their plain cheese pie isn’t.
