Pizza Review
Born and raised on east coast pizza, and this is the best pizza in Long Beach in my opinion. Napoli style wood fired oven pie. Family owned and operated place. That said, respecting the rules as they have been established, 7.9 is as high as I can go in good faith. The pros; proper leoparding on the bottom of the pie, beautiful crunchy outer crust, very good flavor, and high quality ingredients over all. The cons; the sauce is a great San Marzano tomato sauce, but could do better with a little more depth of flavor...falls a little flat. The biggest issue is that even though the bottom has that nice leoparding you look for, the pie is very thin, not necessarily a con in my book, but here it ends up up being too soft and chewy. The flop is severe! No structure! So overall, very solid flavor and great outer crust, but the sauce cld use a little more pizaz and the inner crust cld use more baking time and/or thickness and/or recipe change to improve the structure and chew. Still highly recommend if your in the LB area.
