Extreme pedigree accuracy alert- Yes, this is considered best in Brooklyn, and USA. Justified? Nope. Good? Yes. World class? No Cheese - subtle. Very little tang. Delicious and excellent chew. Above average but not stellar. Sauce - good but not great. A hint of sweet and spice. Doesn’t jump out Dough - here, in fairness…this is purely my bias. Nice taste, the parts that are not charred taste like excellent bread. But the char both top and bottom in some bites are so profound it simply tastes burned. The char sometimes overwhelms me. I think the Connecticut Apizzas have perfected this art in a way this doesn’t. There’s no denying the quality and attention to detail to the crunch and taste. Challenge to me is the baking process, not the quality of the dough. Ratio - it’s fine. Execution - baking process good and the overall taste is quite good. It just doesn’t knock my socks off. If this were a Philly athlete it would be Tobias Harris. Chopin once said, “You can’t compose great music without love. Moments may sound angry or sad or joyous, but it won’t stir any emotion if the overall motivation isn’t love for something or someone.” Bonus burrata - did nothing for me. Worth a try, really unique and not remotely special- 7.9 App score for the standard Margherita.
