Opened in 2018 by owner Will Kokines in the Riverdale Farms shopping complex after spending the previous 15 years in the Simsbury Town Shops. This pie is somewhat of a hybrid between New Haven style & New York pizza, uniquely delicious with the texture & taste very much in sync. Rather light, the dough is moderately thin with a fairly firm undercarriage & magnificent char, particularly on the thinnish & incredibly crunchy crust. The body of the dough is pretty soft & void of crisp but terrifically tasty. Beautifully blackened with killer crunch, the crust is the star of the pie. Modestly tight & somewhat similar to bar pie style, the shredded mozzarella blend also has characteristics of New Haven & football pizza cheese. A very versatile mozzarella mixture, the cheese is delectably sharp & pungent with a heavy garlic flavor. Slightly salty & scrumptiously savory, the sauce is also packed with a garlicky punch. Just a tad bitter, the sauce is lacking signature sweetness, yielding to the saltiness from some of the excess oil. A handful of shredded basil is baked into the cheese, accentuating some of the tomato flavor in the sauce. Overall, this is a very tasty pie with quality consistency, straddling the line between 7.9 & 8.1; but the uniqueness of the flavors & tremendous texture of the crust push this pizza into travel-worthy territory. Aside from crisping the body of the dough & sweetening the sauce a smidge, there isn’t too much to improve. All in all, this is delicious pizza that isn’t full-blown imitation New Haven or New York style located in the middle of Connecticut.
