Pizza Review
The pizza was layered on a crispy charred crust. The perfect crunch and chewy center left no doubt that that this was one of the restaurants grandfathered into having a coal fired oven. The flavor was unreal and easily the best tasting crust I have ever eaten. The high quality tomatoes brought a brightness and natural sweetness to the sauce. Where this pizza was lacking, was the cheese. Thin dollops of fresh mozzarella were scattered on the pie, leaving large areas of real estate barren with exposed sauce. This cheese was virtually tasteless, adding only to the texture. If only the cheese matched the flavor profile of the sauce and crust, this might be the G.O.A.T. Never the less, great pizza if you want a taste of history.
