Probably the closest you'll get to a bona fide "Toronto Style" Pizza. Think NYC thickness and constitution but substitute a crust for a Neapolitan cornicione and you'll be almost there mentally. It's good! The 3 cheese blend used is a similar trick used by Di Fara (Block low moisture mozzarella, fresh mozzarella and a hard cheese like pecorino/parmigiano reggiano) and has great flavour and oiling. I happen to prefer Neapolitan pizza over all other styles so the score is reflective of my admitted preference here. In concept this could be the perfect pizza but I often found myself craving either the tenderness of a traditional Neapolitan, or the folding tactile feel of an NYC slice, neither of which Maker delivers. It is in the middle, but perhaps not the sweet spot, between these two styles. Still, if you can learn to love it on its own terms, Maker Pizza provides a thoroughly enjoyable experience.
