No longer Foozo, this is now a different Kosher pizzeria under new ownership with a name I didn’t quite catch cause the sign outside still said Foozo. Catering to the Jewish community, this spot uses all Kosher ingredients including a very specific type of cheese with a distinct flavor that doesn’t quite match the deliciousness of regular mozzarella and produces a significant amount of extra oil to go along with a saltier flavor, not exactly my favorite type of pizza cheese. Nonetheless, this is a very thin pie, light & airy, pleasantly crispy with a well-charred & firm undercarriage, to go along with a wonderfully crunchy crust, all cooked in a regular electric oven. While not quite on par with NYC pizza, this is exceptional dough for the Miami/Florida area. Sweet & also light with decent tang & zip, the sauce is very tasty but too lightly smattered, lacking enough volume. Another ladle would go a long way in boosting the flavor & final score. Terrific consistency overall, this is some of the best Kosher pizza I’ve ever had. Even though the cheese isn’t particularly my style, there’s really nothing they can do to change that because of the Kosher guidelines. Despite the lack of sauce, the taste & texture of the dough was good enough to launch this pizza into the 7s. Not sure how this stacks up against the Foozo that was here, but this is a very solid pie worth giving a try.
