Pizza Review
As the old saying goes: “Imitation is the greatest form of flattery;” make no mistake about it, this is imitation New Haven style pizza. Open since 2000, they serve self-proclaimed “New Haven Wooster Street style” pies. Extraordinarily similar to Capone’s Pizza Bar across the highway, only much softer. Despite some decent char, this pie seemed a little undercooked and doughy, lots of floppage, virtually zero crisp, but tasty nonetheless. The cheese was mostly generic, melted well, a smidge greasy, with fairly average flavor. The sauce had a little kick, decent tang, nothing special but not terrible by any means, just flavorful enough to be considered above average. Overall, there’s room for improvement across the board. Starting with the dough, this pie just needs more time in the oven; it’s way too soft, in need of serious crisping. The cheese had kind of a weird cheddar aftertaste; might have to vary the blend with a little Parmesan or pecorino Romano. And while the sauce was plenty tasty, it could be a little sweeter to give it some distinction. All in all, this is adequately solid pizza as is, just not remotely close to the legendary pies of New Haven.
