Served NoCal in the spring warm in 1-2 minutes (the first slice was in for about 6-7, I asked for a new one) with a heavy Riverdale Ave flop and zero South Riverdale crisp.

The sauce is thick, heavy and tastes over reduced with a mild tang and heavy oregano notes. The mozzarella is pretty decent quality with a moderate chew and salinity. The cheese is very oily and soupy when first out of the oven. The dough is very good with a decent undercarriage, crunch and chew. It is not overworked and has a pleasant after taste.

SAUCE: very good with a strong flavor and balanced salinity, I would like to have less thickness and seasoning and opt for a lighter uncooked version
MOZZY: they use “Grande” mozzarella and it is pretty good, it’s oil content leads me to believe it is slightly on the upper middle to middle class of cheeses.
DOUGH: not much to talk about. Slightly thinner might give the slice a chance to lose its flop.
Summary: the reviews are pretty consistent with my tasting. The slice got better as I ate it. The soupyness dissapears midway and it becomes rather enjoyable. Points are deducted for the irregularities in ratio and oil levels.
