This was a surprisingly firm pie despite the appearance of being soft and doughy. Those opposing attributes are embodied in the terrific crust, crispy but also doughy. Outstanding consistency with the cheese: melty, creamy, with a nice oozy flow, provides tremendous contrast with the crunchy dough. Sadly, the sauce was a bit of a letdown; it just doesn’t pack much of a punch, lacking some zip. If they find a way to jazz up the sauce, this pie could easily slide into the 8s. As it stands, all of the other ingredients are very solid and overall are much better than expected. This is pretty good pizza with room to improve.
