Caught these guys as they were closing up shop for the day; so I know I’m grading on a rushed pie but they were nice enough to make one last pizza for me before heading home for the night. As to be expected, the dough was soft and floppy, undercooked with no crisp after having spent less than 10 minutes in the oven. Aside from that, I loved everything else about this pie; it’s New York style football pizza in Connecticut. Basically a straight fastball humming down the pipe…a blue collar, lace up your work boots, grab your lunch pale and go to work, family friendly, Friday night, neighborhood pizza. Despite the floppiness, the dough is very tasty, like it was made with NYC water. And even though the crust was soft as well, it was delicious. My favorite aspect of the pie is the scintillatingly sweet sauce, bursting with tangy & zesty flavor. I noticed just a touch of Parmesan to neutralize some of the sweetness. While the cheese is mostly standard, it’s a tasty blend, melted well with a nice lava-like gooey, oozy flow. I can see why this is one of the more reliably good pizzas in Danbury. Obviously I’m not holding the score against them for rushing the pie since it was my fault for ordering near close; but if they leave this pizza in the oven til it crisps perfectly, we’re looking at a rating somewhere in the 8s. This has the potential to be quintessential travel-worthy NY style pizza in CT. Shout out to these guys once again for keeping the joint open and allowing me to grab a very solid, quality pie.
