🚨UNDERRATED PIZZA ALERT🚨 Along with their other location in Staten Island, this Morristown spot serves 2 different types of pizza: their “Signature Pie,” inspired by the legendary Totonno’s of Coney Island, cooked in a coal-fired oven at 650°+ for 5 minutes, and their Neapolitan style Margherita pizza cooked in a wood oven imported from Naples at an intense 800°+ for just 90 seconds. I opted for the Signature Pie, which is the closest they have to a regular coal-fired plain cheese pizza. This is truly a unique, off the beaten path, outstandingly original style pie. Even though it looks somewhat heavy, it’s actually rather light, airy & fluffy, particularly the crust which appears to be a uniquely knotted or braided style that would be perfect for garlic knots or a stuffed-cheese crust. With a surprisingly crispy & crunchy texture, the dough is mostly firm, magnificently charred with a beautifully blackened undercarriage to go along with a remarkably tasty & smokey flavor, nearly zero flop, providing a top notch base for the other ingredients. This is actually a bit of an upside down pie, with the mozzarella cheese hugging the dough in spots & the sauce smattered atop the pizza. Creamy & melty, the homemade mozz is deliciously delightful, with a touch of grated pecorino romano enhancing the overall flavor. Made from fresh peeled tomatoes & sautéed with garlic & a blend of special seasonings, the sauce is super sweet, hearty, chunky, tangy, zesty, & bursting with flavor & plenty of pizzazz that could be applied to a pasta dish or meatballs as well. A smidge more sauce would create a better balance among all of the components but the flavors from the dough, cheese & sauce work really well together as is, especially the synergy among the textures of these elements, each shining in their own way. This is not a typical straight fastball football pizza; this is a hanging curveball over the plate & I’m banging it! Couldn’t be more pleasantly surprised by how good this different coal-fired style is; and I’m somewhat stunned by some of these lower scores. Underrated to say the least, this is uniquely good travel-worthy pizza that deserves more consideration. Bonus meatball review: very solid, pretty close to the kind my grandmother made; I’ll go 8.5 for the fried meatballs. Grandma Millie would be proud! 🤌🏻
