This is pretty standard traditional strip mall football pizza for the most part. The dough is thickish, soft but not floppy, fairly firm undercarriage, nice char with a terrifically thin, crispy & tasty crust. The dough also has a rather strange sourdough-like flavor, kind of an acquired taste, even though I’m mostly certain they don’t use sourdough. The crust does not have that same flavor; it’s almost like a separate entity in both taste & texture. They use Grande mozzarella, a top notch pizza cheese, melted well with quality flavor, automatically raises the pie to above average levels. A little bit of manageable grease atop the cheese is typical of Grande mozz, nothing to be alarmed about. Despite a solid cheese to sauce ratio, the sauce is supremely neutralized by the overpowering oregano flavor. Lacking sweetness, the sauce doesn’t have enough garlic or salt either, overshadowed by too much oregano. While that’s not a flavor I normally prefer, the sauce is still good, but has room for improvement. This is not a fancy pizza by any means; it’s a very blue collar pie, workman-like, gets the job done. Truthfully, the quality of the crust elevates this pie above basic football pizza; making it an overall very solid strip mall pizza.
