Pizza Review
I don't know about you, but this is a good *looking* slice. And it was pretty good. I just wish I could post two pictures, because the full pie looked even better. The only thing better than that though, was when you walk in, they got a beautiful old school brick oven that looks about as old as the building. Probably been there since the late 50s/60s. But lemme get into the details of the slice here. So first off this was well done. I think that should be the default of how baked a slice should be. That oven has decades of seasoning on it and I’m not shocked at all that it’s producing pizza like this even though it was closing time. It was crispy from first to last bite. The chew of the crust was fairly light, as was the slice in general. You can see the airiness of the crust through the multiple bubbles, which are a sign of fermentation activity. This is a better crust than most slice joints we got. Mozzarella is obviously low moisture, full fat, and definitely had the cheese pull, separation, and taste that tells me it’s quality. Someone in my house bought Pizza Hut recently—Domino’s, Pizza Hut, Papa John’s all get Lepino cheese—and it’s amazing the night and day difference to the real thing . Notice how the crust is well cooked and yet not a bit of burning on the cheese? That’s a telltale sign of cheap or heavily part skimmed cheese. Nary much of any grease on this cheese. The area that hurt this slice though was the lack of sauce. They definitely use a oregano hinted, raw, small chunked tomato sauce. It just needed better distribution and salting. It’s a neutral tasting sauce not strongly sour/acidic or naturally sweet. Right in between, which is good for a New York style sauce. I’m contemplating re-scoring my first reviews of local pizzas after I hit 100 reviews, because I probably score them too low. A bunch of my mid 6s should be 7s and low 7s should be mid 7s. So adjusted for that I’m gonna go 7.3. In center Yorktown, IMO, your best bet in getting a Friday night 2x pie for $20 at Uncle Giuseppe’s or their Margherita (7.8/8.2 respectively) but this is easily the next best place we got here.
