🍅SENSATIONAL SAUCE ALERT🍅 Owned & operated by the same family for almost 40 years, Papa Joe’s “Signature Pie” is an absolute must-try pizza in the Constitution State. This brick oven pie is very similar to a Margherita style pizza, consisting of fresh mozzarella, freshly picked basil, extra virgin olive oil and a tomato sauce that will knock your socks off! The dough is mostly soft with a fairly firm undercarriage, tasty but not quite on a New Haven level, although the crust is exquisitely crunchy with fantastic crisp. Blanketing the top of the pie is pristinely white fresh mozzarella, deliciously creamy, marvelous texture, of outstanding quality. Underneath this delectable layer of cheese is a taste explosion with some of the most distinctly delicious tomato sauce I’ve ever tasted. A super sweet tomato blend bursting with flavor, a scintillating symphony serenading the taste buds with a perfect combination of tang, spice and sweetness. The fresh basil & EVOO compliment the other ingredients beautifully in a true feast of the senses. This is a surprisingly amazing pie. The only area that falls a little short is the taste & texture of the dough, but that’s only because it doesn’t match New Haven or NYC dough; it’s still plenty tasty and has just enough crisp, just not enough to push this pie into the 9s. However, this is a travel-worthy pizza, a must-try pie in Connecticut for the dynamic sauce & cheese combination alone. Make sure you order Papa Joe’s “Signature Pie,” I assure you it will not disappoint.
