Pizza Review
Billed as one of the best pizzas outside of new haven the hype for Papas was palpable. To say it blew away my expectations and most of the roof of my mouth is an understatement as the take out only pie retained maximum heat on a windy 50 degree day. The crust is thinner than expected in the best ways and holds up to the plentiful amount of cheese and sauce with an amazing crunch to each bite and a coal fired taste to the charred undercarriage with some nice pocketing and airyness on the back end. This is a cheese heavy pie and I say that as a compliment as it reminds me of the perfect old school Friday pies that had melty cheese dripping from every bite without overpowering the other ingredients. The sauce while not as abundant as the cheese is still plentiful and crazy tangy with the help of some hard cheese melding perfectly from the well done cook for that lava like first few bites I kill for and really keeps the pie juicy. Easily one of the best travel worthy pizzas in the region with a coal fired aftertaste that If it were located on Wooster everyone would slot it in with Modern, Sally’s and Pepe’s.
