It’s a very standard Neapolitan style. I like the style so I start at 7.1. I wanted to do the wallet fold thing with it from Dave’s review today but it didn’t work out that great. The dough wasn’t fluffy enough for that.

Great crust...some flop. Looks greasy in pic but wasn’t at all. Best crust ever—awesome sauce
