Opened in 2019, taking over the Dominick’s Pizzeria spot, they’re evidently known more for their Trenton style tomato pies, which I did not know when I ordered a standard cheese pizza, essentially a Central Jersey football pizza. Rather light & thinnish, not particularly crispy, very mildly charred with medium flop, the dough is mostly soft & tasty to go along with a flaky & slightly crunchy crust. An above average shredded mozzarella blend, the cheese is nicely melted & fairly creamy; despite harboring a moderately manageable amount of grease, the mozz has decent flavor. Saltier in the middle of the pie, the excess oil seems to infiltrate the taste of the cheese most at the tips of each slice. The sauce is also more savory in the center of the pizza, sweeter, heartier & more prevalent down near the crust where the cheese begins to fade. With solid seasoning & kick, the sauce has some quality zest & zing, giving the pizza a little personality. A fairly simple pie overall, this is very good “anytime” Central Jersey football pizza. Distribute the sauce a bit more evenly, crisp up the dough significantly & temper the grease flow to boost this pie up towards the 8s. Though a fine standard cheese pizza, their Trenton style tomato pies may be the way to go here.
