Patsy’s sixth and latest location…this review is a big one for me because I haven’t gone to Mecca in East Harlem yet: Patsy’s in Wappingers!
First, right out the gate: it’s a great pie. Go now. I’m definitely coming back with friends to get the regular plain. I took 20 minutes second guessing (after eating most of this pie) if I should’ve ordered the other one—I was just short on time. It’s so worth coming back for. I’ll probably go to the Nanuet location next time.
So what’s up? This pie’s got a great crust. It’s light, see through thin, delicate to chew, and coal oven charred without getting into Sally’s char territory. I like that because there’s an argument to be made that that’s too much. I’ve read pamphlets thicker than the tip of this slice. This is how you do ultra thin pizza.
They don’t mention using San Marzano tomatoes but these tomatoes are quality. Tangy yet leaning more toward natural sweetness than sour. So good you don’t even need herbs to season it. Sauce is milled to a petite diced chunk. I like when I can see tomato.
Mozzarella on this pie is quality, creamy fresh mozzarella. Not that plasticky semi-soft stuff that doesn’t melt in your mouth. There are shards of parmigiana all over on top of finely placed basil you get in every bite.
It’s a tasty, flavorful pizza that looks nice even just aesthetically. The spot on East Main St. is nice. It is date night pizza. Because you won’t feel bloated after even a few slices. If you think Fishkill/Wappingers is just strip mall hell, their downtowns buck that trend.
Last word on the pizza, you know I go for sourdough, aerated crusts with crispy, charred open crumb corniciones. This defies all that and just serves as a great crust to deliver the cheeses and sauce.
It’s the best ultra thin crust I’ve had. It’s crust is best compared to Johnny’s Mount Vernon. And if you know pizzeria history, they’re connected. Although this crust won’t hold a handle to that one for the crisp-heads—it’s not exceptionally crispy yet there’s no flop the whole way through. But that lack of crispy crunch at the tip matters less to me because this pizza is just more flavorful than Johnny’s.
If I were being less overly respectful in that review, and this is blasphemy as a Westchester boy, I would’ve scored Johnny’s lower than the 8.2 I think I gave it. This is an 8.5
