Plain cheese slice - the underside of the crust is the highlight. It’s got that light toasted marshmallow texture. Airy bread like cornicione that gives a snappy little crunch. I like the cheese. Buttery and flavorful. The sauce is a bit basic and one dimensional for my own personal liking. A bit oily on top. I wish the dough had more of a flavor. Sicilian slice- pretty happy with this. The underside is shining with buttery, olive oil, crispy golden brittleness that gives way with a pillowy softness in the middle. The cornicione is great. Thin layer of crispness hiding a soft, fluffy layer. Buttery, oily, high fat mozzarella. Sauce is the same one dimensional, mildly acidic and bright. That’s my biggest complaint and I can deal with that. Going combined on cumulative here: Plain - 5.7 Sicilian - 7.5 —————— 6.6 Go for the Sicilian!
