Served NY JETS in the second half of the season warm in 1-2 minutes with a medium Skyview flop and a decent North Riverdale crisp. First Bite Score: 6.6 The sauce is the binder of this slice. It is very tangy, salty and seasoned. The mozzarella is decent quality with low salinity and good texture and chew. The dough is fair at best with a slight cornmeal undercarriage and minimal char. The chew is decent but a tad overworked. SUB SCORE: 6.6 SAUCE: by itself it’s very overwhelming with heavy tang and too much salt & seasoning. The funny it is that when combined with the two other elements of the slice, they seem to play nice together. MOZZARELLA: the cheese is mid at best with no discernible positive qualities other that a decent chew. DOUGH: the crust and slice are very thin, light & fluffy. Maybe a little more yeast and salt would allow for more crisp and more rise in the crust. RATIO: way off here with heavy sauce toward the middle of the pie and thick bands of cheese toward the end. Summary: this is a party slice or a school function slice at best. Good thin undercarriage, nice combination of flavors but sadly disappointing when it comes to execution and the end result.
