I’ve never once commented on previous reviewers and the reality that they have no meaningful quantity of reviews. Today, I have no choice. If you check the majority of reviews here, most have ten or less. And since there are very few reviews in the first place, you have a handful of inexperienced reviewers essentially destroying a place. PBE is all about creativity from a food point of view. There are no traditional specialty pies for the most part. Any place with fig or filet mignon as a main component in a specialty pie isn’t even Italian. All that being said, I reviewed the most boring pie they have, a three ingredient traditional. Before I break it down, don’t even think about rating a plain pie here. If you order a plain pie here and rate it, you have an agenda to embarrass a hipster restaurant that isn’t remotely pretending to compete with or be like other pizza joints. What’s the point? That being said, having had the goofy, hipster pies here, they are really good. Do yourself a favor and get something off the beaten path. Onward on my three ingredient dough, cheese, sauce pie- Eye test - weak Execution- good but not great. My main issue is ratio, which I’ll get to next, but it is an issue. Baking process slightly above average, however, taste was outstanding. Ratio- certainly too much cheese and sauce, which is rare. Could have backed off on both. Cheese- Just mozz. Fresh and delicious. Neutral with no tang. Great chew Sauce- they have chunky but I ordered traditional ladled sauce with no chunks. Sauce was really good. This was an imperative since the cheese was so neutral. Very little sweetness or spice. And unbelievably delicious. Dough- gluten free and perfect. Phenomenal taste and perfect crunch. I despise gluten free and this was stellar. Gershwin said, “ When I write music, I almost always try to paint a picture.” To summarize, even the specialty pies, which are far superior to the standard, are not world class. This is travel worthy for the experience, ambiance and rich menu. Killer salads by the way. However, the pizza is good not great. If you are traditional, don’t even bother. The point of this place is the fun combos and unusual options. My review comes with zero bias. I couldn’t care less if this place closed tomorrow. However, the other reviews were singularly the dumbest, most absurdly biased reviews I’ve ever seen. And I’ve probably read ten thousand on this app.
