Just like every other wood-fired, brick oven, Neapolitan pizza I’ve ever had, there appears to be a nice char but the dough is soft, chewy & mushy in the center. Unlike some of the other Neapolitans, this actually had a decent char underneath, which definitely boosted the flavor of the dough. The sauce appears watered down and way to thin, almost soup-like. The buffala mozzarella is delicious but needed to be melted more thoroughly. When you call in your order and they tell you it will be ready in 5 minutes, you know they’re not leaving that pie in the oven long enough. Good overall taste though with plenty room to improve. Thicken up that sauce, maybe give it a little kick with some spices, melt that cheese into an oozing consistency and this score could potentially climb into the 8s. As it stands, it’s a typical good Neapolitan personal pie, but don’t go out of your way for it.
